  • 1 tablespoon brown sugar
  • Pinch of table salt
  • ⅓ cup all-purpose flour
  • 1 ½ cups all-purpose flour
  • ½ teaspoon salt
  • ½ teaspoon baking powder
  • 4 ounces cream cheese
  • 12 tablespoons unsalted butter
  • 1 ½ cups granulated sugar
  • ½ teaspoon vanilla extract
  • 1 teaspoon almond extract
  • 4 large eggs

Instructions

  1. Preheat your oven to 325°F. Grease and flour a 9×5-inch loaf pan and line it with parchment paper.
  2. For the peach topping, mix chopped peaches with lemon juice, granulated sugar, cornstarch, melted butter, vanilla extract, almond extract, brown sugar, and salt in a bowl until coated.
  3. In another bowl, whisk together flours, salt, and baking powder. In a separate large bowl, beat cream cheese and butter until creamy; add granulated sugar gradually until fluffy. Beat in eggs one at a time followed by extracts.
  4. Fold dry ingredients into the wet mixture until just combined. Gently fold half of the peach topping into the batter.
  5. Pour half of the batter into the prepared pan; layer remaining peach topping on top before adding remaining batter.
  6. Bake for approximately 90 minutes or until a toothpick comes out clean from the center.
