- Red gel food coloring

- Roll out each dough into rectangles about 10×12 inches thick.
- Stack the red dough on top of the plain dough; roll tightly from one long side to form a log.
- Chill the log again for at least 2 hours before slicing into rounds.
- Preheat oven to 375°F (190°C), line baking sheets with parchment paper.
- Brush the log lightly with water or egg white before rolling it in coarse sugar or crushed candies.
- Slice cookies about 1/4 inch thick; bake for 8–10 minutes until edges are lightly golden.
