  • 1 teaspoon baking powder
  • 1/2 teaspoon salt
  • 1 cup unsalted butter, softened
  • 1 cup granulated sugar
  • 1 large egg
  • 1 teaspoon vanilla extract
  • 1 teaspoon peppermint extract
  • Red gel food coloring
  • Coarse sugar or crushed peppermint candies for coating

Instructions

  1. In a medium bowl, whisk together flour, baking powder, and salt; set aside.
  2. Cream together softened butter and sugar using an electric mixer until light and fluffy. Beat in the egg, then add vanilla and peppermint extracts.
  3. Gradually combine dry ingredients with wet mixture until just combined to form a soft dough.
  4. Divide the dough in half. Keep one half plain; color the other half red using gel food coloring.
  5. Chill both dough halves wrapped in plastic wrap for at least 30 minutes.
  6. Roll out each dough into rectangles about 10×12 inches thick.
  7. Stack the red dough on top of the plain dough; roll tightly from one long side to form a log.
  8. Chill the log again for at least 2 hours before slicing into rounds.
  9. Preheat oven to 375°F (190°C), line baking sheets with parchment paper.
  10. Brush the log lightly with water or egg white before rolling it in coarse sugar or crushed candies.
  11. Slice cookies about 1/4 inch thick; bake for 8–10 minutes until edges are lightly golden.
