  • 3 red bell peppers
  • 1 jalapeño pepper
  • 3 garlic cloves
  • 1 red onion
  • 4 tablespoons olive oil
  • 4 tablespoons lemon juice
  • 1 tablespoon lemon zest
  • 3 tablespoons smoked paprika
  • 2 teaspoons dried oregano
  • 2 teaspoons dried thyme
  • 2 lbs chicken thighs
  • A generous handful of fresh parsley for garnish
  • ½ cup chicken stock

Instructions

  1. In a mixing bowl, blend sliced peppers, jalapeño, garlic, onion, olive oil, lemon juice and zest, smoked paprika, oregano, thyme, salt, and pepper until smooth.
  2. Marinate chicken thighs in half of the marinade in the refrigerator for at least 30 minutes or up to overnight.
  3. Preheat your grill to medium-high heat or oven to 400°F (200°C).
  4. Grill or bake chicken thighs for about 25 minutes until cooked through (internal temperature should reach 165°F/75°C), basting with reserved marinade if desired.
  5. Let rest before serving garnished with fresh parsley.
