Ingredients
- 3 red bell peppers
- 1 jalapeño pepper
- 3 garlic cloves
- 1 red onion
- 4 tablespoons olive oil
- 4 tablespoons lemon juice
- 1 tablespoon lemon zest
- 3 tablespoons smoked paprika
- 2 teaspoons dried oregano
- 2 teaspoons dried thyme
- 2 lbs chicken thighs
- A generous handful of fresh parsley for garnish
- ½ cup chicken stock
Instructions
- In a mixing bowl, blend sliced peppers, jalapeño, garlic, onion, olive oil, lemon juice and zest, smoked paprika, oregano, thyme, salt, and pepper until smooth.
- Marinate chicken thighs in half of the marinade in the refrigerator for at least 30 minutes or up to overnight.
- Preheat your grill to medium-high heat or oven to 400°F (200°C).
- Grill or bake chicken thighs for about 25 minutes until cooked through (internal temperature should reach 165°F/75°C), basting with reserved marinade if desired.
- Let rest before serving garnished with fresh parsley.
