Ingredients

  • 1 pound chicken breast, cubed
  • 1 onion, chopped
  • 2 cloves garlic, minced
  • 1 red bell pepper, diced
  • 1 cup jasmine rice
  • 2 cups chicken broth
  • 1 cup pineapple, cubed
  • 1 tablespoon olive oil
  • 1 tablespoon soy sauce
  • 1 teaspoon ginger, grated
  • Salt and pepper to taste
  • Garnish: green onions, sliced
  • Garnish: sesame seeds

Instructions

  1. Heat olive oil in a skillet over medium heat. Add cubed chicken and cook until golden brown. Remove from skillet.
  2. In the same skillet, sauté onion, garlic, and bell pepper until softened.
  3. Add pineapple and cook for about 2 minutes.
  4. Stir in jasmine rice, chicken broth, soy sauce, ginger, salt, and pepper. Bring to a boil.
  5. Reduce heat to low, cover, and simmer for 18-20 minutes until rice is cooked.
  6. Return the chicken to the skillet; mix well to combine all ingredients. Heat through for an additional minute.
  7. Serve garnished with sliced green onions and sesame seeds.
