  • 4 cups cooked brown or white rice
  • 1 lb boneless, skinless chicken thighs
  • 3 tablespoons coconut oil
  • 1 yellow onion
  • 1 green bell pepper
  • 1 red bell pepper
  • 3 garlic cloves
  • 1 tablespoon fresh ginger
  • 3 tablespoons soy sauce
  • 1 tablespoon honey
  • 1½ cups fresh pineapple, cubed
  • ½ cup frozen peas
  • 2 tablespoons fresh lime juice
  • Chopped green onions and sesame seeds for garnish

Instructions

  1. Season the chicken with salt and let rest for 10–15 minutes. Pat dry.
  2. Heat 2 tablespoons coconut oil in a wok over medium heat. Cook chicken until browned (5–7 minutes), then set aside.
  3. In the same pan, add remaining coconut oil and sauté onion until translucent (3–4 minutes). Add bell peppers, garlic, and ginger; cook for another few minutes.
  4. Stir in soy sauce, chilled rice, honey, pineapple cubes, and cooked chicken. Mix well and reduce heat to low; cook for about 5 minutes.
  5. Add peas and lime juice; stir gently until warmed through. Serve hot garnished with green onions and sesame seeds.
