Instructions
- Preheat your oven to 325F (165C). Grease and flour a Bundt pan.
- In a large bowl, cream together the butter and sugar until light and fluffy. Add eggs one at a time, mixing well.
- Stir in vanilla and optional pineapple extract. In another bowl, whisk together flour, baking powder, and salt.
- Gradually combine dry ingredients with the butter mixture alternating with sour cream. Fold in drained crushed pineapple.
- Pour batter into the prepared pan and bake for 75-85 minutes or until a toothpick comes out clean.
- For the glaze, mix powdered sugar with reserved pineapple juice until desired consistency is reached. Drizzle over cooled cake.
