  • 2 tbsp flour
  • 2 cups chicken stock
  • 1/2 onion, diced
  • 3 russet potatoes, chopped
  • 8 oz sharp cheddar cheese
  • 4 oz white cheddar cheese
  • 1 Boursin Garlic & Chive cheese round
  • Salt and pepper to taste

  3. Add diced onion and gradually pour in chicken stock while stirring.
  4. Slowly add more chicken stock to thicken the mixture.
  5. Incorporate the shredded sharp cheddar and Boursin cheese until melted.
  6. Gradually mix in half of the beef broth, thickening as you stir.
  7. Season with salt, pepper, and whole grain mustard.
  8. Stir in chopped potatoes and simmer for 10-15 minutes until tender.
  9. Blend half of the soup for a creamy texture while leaving some chunks.
  10. Taste and adjust seasoning before serving hot.
