Ingredients
- 1 cup quinoa (uncooked)
- 100g diced chicken breast
- 2 soft-boiled eggs
- 1 cup broccoli florets
- 1 cup cherry tomatoes
- 2 tbsp feta cheese (crumbled)
- 1 tsp olive oil
- Salt & black pepper to taste
Instructions
- Rinse quinoa under cold water and cook according to package instructions until fluffy.
- Season the diced chicken with salt and pepper. Heat olive oil in a skillet over medium heat and cook chicken for 5-6 minutes until golden.
- Boil water in a pot, gently add the eggs, and cook for 7 minutes for soft-boiled. Cool under cold water, peel, and slice in half.
- Steam broccoli florets in a steamer basket over boiling water for about 3-4 minutes until tender but bright green.
- Assemble the bowl by placing cooked quinoa at the base, followed by chicken pieces, egg halves, steamed broccoli, and cherry tomatoes. Sprinkle with feta cheese and season.
