Ingredients

  • 375 g Puff Pastry Sheet (ready rolled)
  • 400 g Mincemeat
  • 40 g Dried Cranberries
  • Zest of 1 Clementine
  • 1 Egg (beaten)
  • 1 tbsp Icing Sugar

Instructions

  1. Preheat the oven to 200°C (180 °fan/ Gas 6) and line two baking sheets with baking paper.
  2. Unroll the puff pastry on a clean surface and spread the mincemeat evenly over it, leaving small gaps on both long edges.
  3. Scatter dried cranberries over the mincemeat and grate fresh clementine zest on top.
  4. Roll the pastry tightly from one long edge to form a cylinder using baking paper as assistance.
  5. Chill in the fridge for about 15 minutes if time allows.
  6. Slice the roll into 2cm thick pieces and place them on the lined baking sheets. Brush each slice with beaten egg.
  7. Bake for 15-17 minutes until golden brown, then cool for about 10 minutes before transferring to a wire rack.
  8. Dust with icing sugar before serving.
