Ingredients
- 375 g Puff Pastry Sheet (ready rolled)
- 400 g Mincemeat
- 40 g Dried Cranberries
- Zest of 1 Clementine
- 1 Egg (beaten)
- 1 tbsp Icing Sugar
Instructions
- Preheat the oven to 200°C (180 °fan/ Gas 6) and line two baking sheets with baking paper.
- Unroll the puff pastry on a clean surface and spread the mincemeat evenly over it, leaving small gaps on both long edges.
- Scatter dried cranberries over the mincemeat and grate fresh clementine zest on top.
- Roll the pastry tightly from one long edge to form a cylinder using baking paper as assistance.
- Chill in the fridge for about 15 minutes if time allows.
- Slice the roll into 2cm thick pieces and place them on the lined baking sheets. Brush each slice with beaten egg.
- Bake for 15-17 minutes until golden brown, then cool for about 10 minutes before transferring to a wire rack.
- Dust with icing sugar before serving.
