  • 6 slices Turkey Bacon, chopped
  • 4 sweet onions, thinly sliced
  • Kosher salt & black pepper, to taste
  • ½ cup apple cider
  • 1½ cups ricotta cheese
  • 1⅓ cups pumpkin purée
  • 2 cups freshly grated mozzarella cheese
  • 2 handfuls fresh sage leaves
  • Grated Parmesan cheese, for topping
  • 2 sheets frozen puff pastry, thawed
  • 2 large eggs + 2 tsp water, for egg wash

Instructions

  1. In a large skillet, cook chopped turkey bacon until crisp; set aside.
  2. In the same skillet, caramelize thinly sliced onions over medium-low heat with salt and pepper until golden brown, about 25–30 minutes. Stir in apple cider and cook for an additional 5 minutes.
  3. Preheat oven to 400°F (200°C). Roll out puff pastry sheets on a floured surface, place on lined baking sheets, score edges.
  4. In a bowl, mix ricotta and pumpkin with seasoning. Spread inside the pastry borders; layer with caramelized onions, mozzarella cheese, and turkey bacon.
  5. Top with fresh sage leaves and brush edges with egg wash. Bake for 25–30 minutes until golden brown.
