Ingredients
- 6 slices Turkey Bacon, chopped
- 4 sweet onions, thinly sliced
- Kosher salt & black pepper, to taste
- ½ cup apple cider
- 1½ cups ricotta cheese
- 1⅓ cups pumpkin purée
- 2 cups freshly grated mozzarella cheese
- 2 handfuls fresh sage leaves
- Grated Parmesan cheese, for topping
- 2 sheets frozen puff pastry, thawed
- 2 large eggs + 2 tsp water, for egg wash
Instructions
- In a large skillet, cook chopped turkey bacon until crisp; set aside.
- In the same skillet, caramelize thinly sliced onions over medium-low heat with salt and pepper until golden brown, about 25–30 minutes. Stir in apple cider and cook for an additional 5 minutes.
- Preheat oven to 400°F (200°C). Roll out puff pastry sheets on a floured surface, place on lined baking sheets, score edges.
- In a bowl, mix ricotta and pumpkin with seasoning. Spread inside the pastry borders; layer with caramelized onions, mozzarella cheese, and turkey bacon.
- Top with fresh sage leaves and brush edges with egg wash. Bake for 25–30 minutes until golden brown.
