Ingredients
- 2 double shots of blonde espresso
 - ¼ cup packed light brown sugar
 - 2 tbsp pumpkin puree
 - 1–2 cups ice cubes
 - Cold oat milk (to taste)
 - 2 cinnamon sticks or 1 ½ tsp pumpkin pie spice
 - ½ cup warm water
 - 1 tsp vanilla extract
 
Instructions
- Prepare the Pumpkin Syrup: In a small saucepan, whisk together brown sugar, pumpkin puree, cinnamon sticks or pumpkin pie spice, and warm water. Simmer on low for 2-3 minutes until thickened. Remove from heat and add vanilla extract.
 - Store Syrup: Transfer syrup to an airtight container and refrigerate.
 - Shake Espresso: In a sealable jar, combine one double shot of espresso with 1-2 tablespoons of pumpkin syrup and ice cubes. Shake vigorously for 20-30 seconds.
 - Assemble: Pour the espresso mixture into a drinking glass without ice cubes. Add fresh ice, pour in oat milk to taste, and sprinkle with pumpkin pie spice before serving.
