Instructions

  1. Preheat oven to 350°F (175°C) and line baking sheets with parchment paper.
  2. In a large bowl, cream together the unsalted butter, granulated sugar, and brown sugar until light and fluffy (about 2–3 minutes).
  3. Add in the pumpkin puree, egg yolk, and vanilla extract. Mix until fully combined.
  4. In a separate bowl, whisk together the all-purpose flour, baking powder, salt, ground cinnamon, ground nutmeg, and ground cloves.
  5. Gradually add the dry ingredients to the wet mixture. Stir until just combined; avoid overmixing.
