  • 1/2 cup chopped cremini mushrooms
  • 1 bag frozen vegan dumplings (12 to 15 pieces)
  • 1 tsp salt
  • 1 tsp sugar
  • 1 tbsp chopped cilantro (fresh)
  • 1 tbsp sliced scallion greens
  • 1 tbsp crunchy garlic

Instructions

  1. Heat avocado oil in a large pot over medium heat. Sauté diced onion and garlic until translucent.
  2. Add chopped mushrooms and cook for about 3 minutes.
  3. Pour in vegetable broth, coconut milk, soy sauce, red Thai curry paste, salt, sugar, and chili oil; stir to combine.
  4. Bring to a simmer, then reduce heat and cook gently for about 5 minutes.
  5. Add frozen dumplings and cook according to package instructions (about 5-7 minutes).
