- 1 tsp Salt
- 1 cup Unsalted butter (melted)
- 3/4 cup Brown sugar (packed light or dark)
- 3/4 cup White granulated sugar
- 1 tsp Pure vanilla extract
- 1 Large egg (room temperature)
- 1 Egg yolk (room temperature)
- 1 cup Frozen raspberries (slightly thawed)
- 3/4 cup White chocolate chips (plus more on top of the cookies)
Instructions
- Melt the butter in a microwave-safe bowl and let it cool for about 10 minutes. Thaw the frozen raspberries during this time.
- Preheat your oven to 350°F (175°C) and line two cookie sheets with parchment paper.
- In a mixing bowl, sift together all-purpose flour, baking powder, baking soda, and salt.
- In another bowl, mix melted butter with brown sugar and granulated sugar until well combined. Add vanilla extract, egg, and egg yolk; mix until smooth.
- Gradually fold dry ingredients into the wet mixture using a rubber spatula until just combined. Gently incorporate thawed raspberries and white chocolate chips.
- Using a cookie scoop, portion about 3 ounces of dough per cookie onto prepared sheets, spacing them apart.
- Bake for 13-15 minutes or until edges are lightly golden brown.
- Top each warm cookie with extra white chocolate chips right after baking. Let cool on racks.
