  • 3/4 cup Brown sugar (packed light or dark)
  • 3/4 cup White granulated sugar
  • 1 tsp Pure vanilla extract
  • 1 Large egg (room temperature)
  • 1 Egg yolk (room temperature)
  • 1 cup Frozen raspberries (slightly thawed)
  • 3/4 cup White chocolate chips (plus more on top of the cookies)

Instructions

  1. Melt the butter in a microwave-safe bowl and let it cool for about 10 minutes. Thaw the frozen raspberries during this time.
  2. Preheat your oven to 350°F (175°C) and line two cookie sheets with parchment paper.
  3. In a mixing bowl, sift together all-purpose flour, baking powder, baking soda, and salt.
  4. In another bowl, mix melted butter with brown sugar and granulated sugar until well combined. Add vanilla extract, egg, and egg yolk; mix until smooth.
  5. Gradually fold dry ingredients into the wet mixture using a rubber spatula until just combined. Gently incorporate thawed raspberries and white chocolate chips.
  6. Using a cookie scoop, portion about 3 ounces of dough per cookie onto prepared sheets, spacing them apart.
  7. Bake for 13-15 minutes or until edges are lightly golden brown.
  8. Top each warm cookie with extra white chocolate chips right after baking. Let cool on racks.
