- 2 cups (200 g) chocolate cookie crumbs (Oreo or similar, without filling)

- 2 large eggs
- 2 tsp vanilla extract
- 1 tsp white vinegar
- 1–2 tbsp red gel food coloring
- 16 oz (450 g) cream cheese, softened
- ½ cup (100 g) sugar

- ½ cup (120 ml) sour cream or heavy cream

- 1 cup (230 g) unsalted butter, softened
- 4 cups (480 g) powdered sugar

- 2 tbsp water
- 1 tsp lemon juice
- Red velvet crumbs (from cake trimming)

Instructions
- Preheat the oven to 350°F (175°C). Prepare a springform pan and two round cake pans.
- Combine chocolate cookie crumbs and melted butter; press into the bottom of the springform pan. Bake for 10 minutes, then cool.
- In one bowl, mix dry ingredients for the cake layers. In another bowl, blend wet ingredients until smooth. Combine both mixtures carefully.
- Divide batter between cake pans and bake for 25 to 30 minutes, cooling completely afterward.
- For the cheesecake layer, beat cream cheese with sugar until smooth; add eggs, vanilla extract, and sour cream. Pour over crust and bake at 325°F (160°C) for 40 to 45 minutes until set.
- Assemble by layering red velvet cakes with cheesecake in between, frost the entire cake, then add glaze and decorations.
