  • 5 tbsp unsalted butter
  • 16 oz cream cheese, softened
  • ¾ cup granulated sugar
  • ¼ cup sour cream
  • 4 large eggs
  • 1 ½ tbsp cocoa powder
  • 1 ½ tsp vanilla extract
  • 1 tbsp red food coloring
  • ½ cup heavy cream
  • ¾ cup semi-sweet chocolate chips

Instructions

  1. Preheat oven to 325°F (163°C). Grease a springform pan and line with parchment paper.
  2. Mix Oreo crumbs with melted butter and press into the bottom of the pan. Bake for 8-10 minutes and let cool.
  3. For the red velvet layer: Beat cream cheese and sugar until smooth; add sour cream, eggs, cocoa powder, vanilla extract, and food coloring. Pour over cooled crust.
  4. For the vanilla layer: Beat cream cheese and sugar until smooth; mix in sour cream, eggs, and vanilla extract. Pour over red velvet layer.
  5. Bake for 50-60 minutes until edges are set but center is jiggly.
  6. Let cool in oven with door ajar for an hour, then chill in refrigerator for at least six hours.
  7. Make ganache by heating heavy cream then pouring over chocolate chips; stir until smooth. Pour over chilled cheesecake.
