- 6 roma tomatoes (halved)
- 1 cup cherry tomatoes (whole)
- 1 medium yellow onion (roughly chopped)
- 1 head of garlic (halved)
- 1/4 cup extra-virgin olive oil
- 1 cup vegetable broth (or chicken broth)
- 1/4 cup heavy cream (adjust with more cream if you prefer)
- 5 large basil leaves (plus more for serving)
- 1 teaspoon balsamic vinegar
- Kosher salt and freshly ground black pepper
- 1 french or sourdough baguette (thinly sliced)
- Olive oil and shredded gruyère (enough to fill the surface of the toasts)

Instructions
