  • 6 roma tomatoes (halved)
  • 1 cup cherry tomatoes (whole)
  • 1 medium yellow onion (roughly chopped)
  • 1 head of garlic (halved)
  • 1/4 cup extra-virgin olive oil
  • 1 cup vegetable broth (or chicken broth)
  • 1/4 cup heavy cream (adjust with more cream if you prefer)
  • 5 large basil leaves (plus more for serving)
  • 1 teaspoon balsamic vinegar
  • Kosher salt and freshly ground black pepper
  • 1 french or sourdough baguette (thinly sliced)
  • Olive oil and shredded gruyère (enough to fill the surface of the toasts)
  • Salt and pepper to taste

Instructions

  1. Preheat your oven to 400°F (200°C).
  2. On a baking sheet, toss halved roma tomatoes, whole cherry tomatoes, chopped onion, halved garlic, olive oil, salt, and pepper. Roast for 30-40 minutes until tender and charred.
  3. For a stovetop version, combine all ingredients in a large pot over medium heat until everything bursts and becomes soft.
  4. Prepare crispy gruyère toasts by slicing a baguette, drizzling with olive oil, topping with shredded gruyère cheese, seasoning with salt and pepper, and baking until crispy.
  5. Blend the roasted mixture with vegetable or chicken broth and fresh basil until smooth.
  6. Stir in heavy cream and balsamic vinegar; serve topped with crispy toasts and fresh basil.
