- 3 white onions
- 5 cloves garlic
- 3 mixed peppers
- 500 g sweet potatoes
- 6 salad tomatoes
- 500 g large carrots
- Fresh rosemary
- 100 ml single cream
- 800 ml vegetable stock
- 1 tsp dried sage
- 2 tsp Italian herbs
- 4 tbsp extra virgin olive oil
- Salt and pepper
Instructions
- Preheat your oven to 200°C (400°F).
- In a large bowl, combine sliced onions, garlic (skin on), peppers, sweet potatoes, tomatoes, and carrots with olive oil, salt, pepper, sage, and Italian herbs. Toss until well coated.
- Spread the vegetable mixture on a baking sheet in a single layer. Roast for 30–35 minutes until tender and caramelized.
- Allow the roasted vegetables to cool slightly before transferring them to a blender along with vegetable stock. Blend until smooth.
- Pour the blended soup back into a pot over medium heat and stir in the single cream until combined. Heat gently and adjust seasoning if necessary.
- Serve hot, garnished with fresh herbs if desired.
