Ingredients
- 1 salmon fillet (about 150g)
- 2 eggs
- 1 cup cherry tomatoes
- 1 cup asparagus spears, trimmed
- 5–6 button mushrooms
- Olive oil or butter for cooking
- Salt and black pepper to taste
Instructions
- Season the salmon fillet with salt and pepper. In a non-stick skillet over medium heat, add olive oil and sear the salmon for 3-4 minutes on each side until golden brown. Remove from skillet and keep warm.
- In the same skillet, sauté mushrooms for 4-5 minutes until browned. Season with salt.
- Add asparagus to mushrooms and sauté for another 2-3 minutes until vibrant green.
