  • 1 lb boneless chicken breast
  • 2 cups halved mushrooms
  • 1 clove garlic, minced
  • 1/2 cup heavy cream
  • 1/3 cup shredded asiago cheese
  • 1/2 cup all-purpose flour
  • 3 sprigs of fresh thyme
  • 1/2 teaspoon salt (or to taste)
  • 1/4 teaspoon black pepper (or to taste)
  • 2 tablespoons butter
  • 2 tablespoons olive oil
  • 1 1/2 cups dry white apple vinegar

Instructions

  1. Pound chicken breasts to about 1/4 inch thick and cut into smaller pieces.
  2. In a skillet, heat butter and olive oil over medium heat until bubbly.
  3. Dredge chicken in seasoned flour, then sauté until golden brown on both sides; set aside.
  4. Sauté mushrooms with minced garlic until browned.
  5. Deglaze the pan with apple vinegar while scraping up browned bits.
  6. Return chicken to the pan and simmer covered for 15-20 minutes.
  7. Stir in heavy cream and asiago cheese; cook on low until melted and thickened.
  8. Serve warm, garnished with fresh thyme.
