Instructions
- Puree the watermelon until smooth using a stand mixer or hand mixer. Strain through a fine-mesh strainer to yield about 3 cups of juice.

- In a medium saucepan, bring the remaining watermelon juice to a boil over medium heat; then reduce to simmer for 5 minutes. Stir in sugar and vanilla seeds until dissolved.
- Whisk in the cornstarch mixture and simmer for an additional 3 minutes while stirring occasionally. Add lemon juice before removing from heat.
- Strain the pudding mixture into jars or ramekins and chill for at least 3 hours until set.
