  • 2 tbsp cornstarch
  • ¼ cup granulated sugar
  • ½ vanilla bean
  • 2 tsp strained freshly squeezed lemon juice

  • Coarsely chopped or ground unsalted pistachios (for garnish)

Instructions

  1. Puree the watermelon until smooth using a stand mixer or hand mixer. Strain through a fine-mesh strainer to yield about 3 cups of juice.
  2. In a small bowl, mix 2 tbsp of the juice with cornstarch until smooth.
  3. In a medium saucepan, bring the remaining watermelon juice to a boil over medium heat; then reduce to simmer for 5 minutes. Stir in sugar and vanilla seeds until dissolved.
  4. Whisk in the cornstarch mixture and simmer for an additional 3 minutes while stirring occasionally. Add lemon juice before removing from heat.
  5. Strain the pudding mixture into jars or ramekins and chill for at least 3 hours until set.
  6. Garnish with whipped cream and pistachios before serving.
