  • 1 tablespoon olive oil
  • 3 tablespoons butter (divided)
  • 2 small zucchini (sliced)
  • 1 small yellow onion (diced)
  • 1 pound small button mushrooms (cleaned)
  • 3 to 4 cloves garlic (minced)
  • ¼ cup vegetable broth
  • Fresh parsley (for garnish)

Instructions

  1. Heat olive oil and ½ tablespoon butter in a large skillet over medium-high heat.
  2. Add zucchini slices, season with salt and pepper, and sauté for 3-4 minutes until tender. Remove from skillet and set aside.
  3. In the same skillet, add remaining butter. Once melted, stir in diced onions and cook for about 2 minutes until softened.
  4. Add mushrooms to the skillet; cook for 5-7 minutes until browned.
  5. Stir in minced garlic and herbs; cook for an additional 20 seconds.
  6. Return zucchini to the skillet, mix gently, then pour in vegetable broth and cook for another 2 minutes.
  7. Adjust seasoning if needed before removing from heat. Garnish with fresh parsley.
