Ingredients
- 2.5 lb beef chuck, cut into cubes
- 2 tablespoons olive oil
- 1 large yellow onion, chopped
- 4 garlic cloves, minced
- 2 carrots, sliced
- 2 celery stalks, sliced
- 1 red bell pepper, chopped
- 1 tablespoon tomato paste
- 1 can (14 oz) crushed tomatoes
- 1 cup dry apple vinegar
- 1 cup beef stock
- 1 teaspoon dried oregano
- 1 teaspoon dried thyme
Instructions
- Preheat oven to 325°F (160°C). Heat olive oil in a Dutch oven over medium-high heat.
- Sear beef cubes until browned on all sides; remove and set aside.
- In the same pot, sauté onion and garlic until softened.
- Add carrots, celery, and red bell pepper; stir in tomato paste.
- Return beef to the pot and add crushed tomatoes, apple vinegar, beef stock, oregano, and thyme.
- Cover and bake for about 3 hours or until the beef is tender.
