  • 2.5 lb beef chuck, cut into cubes
  • 2 tablespoons olive oil
  • 1 large yellow onion, chopped
  • 4 garlic cloves, minced
  • 2 carrots, sliced
  • 2 celery stalks, sliced
  • 1 red bell pepper, chopped
  • 1 tablespoon tomato paste
  • 1 can (14 oz) crushed tomatoes
  • 1 cup dry apple vinegar
  • 1 cup beef stock
  • 1 teaspoon dried oregano
  • 1 teaspoon dried thyme

Instructions

  1. Preheat oven to 325°F (160°C). Heat olive oil in a Dutch oven over medium-high heat.
  2. Sear beef cubes until browned on all sides; remove and set aside.
  3. In the same pot, sauté onion and garlic until softened.
  4. Add carrots, celery, and red bell pepper; stir in tomato paste.
  5. Return beef to the pot and add crushed tomatoes, apple vinegar, beef stock, oregano, and thyme.
  6. Cover and bake for about 3 hours or until the beef is tender.
