Ingredients
- 2 lbs beef chuck, cut into 1-inch cubes
 - 1 tbsp coconut oil
 - 1 large onion, finely chopped
 - 4 garlic cloves, minced
 - 1 tbsp fresh ginger, grated
 - 2 tbsp curry powder
 - 1 can (14 oz) diced tomatoes
 - 1 can (14 oz) full-fat coconut milk
 - Salt and pepper, to taste
 
Instructions
- Prepare your ingredients by chopping the onion, garlic, ginger, and cubing the beef.
 - In a large skillet over medium-high heat, add coconut oil and brown beef cubes for 5-7 minutes. Remove from heat.
 - Sauté chopped onions in the same skillet until translucent. Add minced garlic and grated ginger; cook until fragrant.
 - Combine browned beef with onions in the skillet. Stir in curry powder, diced tomatoes, coconut milk, salt, and pepper.
 - Transfer everything to a slow cooker and cook on low for 6-8 hours or high for 3-4 hours until beef is tender.
