  • 2 lbs beef chuck or stew meat, cut into cubes
  • Salt and black pepper, to taste
  • 2 tablespoons vegetable oil
  • 1 large onion, finely chopped
  • 4 cloves garlic, minced
  • 1 tablespoon fresh ginger, grated
  • 2 teaspoons curry powder
  • 1 teaspoon garam masala
  • 1 teaspoon ground cumin
  • 1 teaspoon paprika
  • 1/4 teaspoon cayenne pepper (optional)
  • 1 can (13.5 oz) coconut milk

Instructions

  1. Season beef cubes with salt and black pepper. Heat vegetable oil in a large skillet over medium heat and sear the beef until browned on all sides.
  2. In the same skillet, sauté chopped onion, minced garlic, and grated ginger until onions are translucent.
  3. Stir in curry powder, garam masala, ground cumin, paprika, and optional cayenne; cook for an additional minute.
  4. Transfer the beef mixture to a slow cooker and add broth or water to cover halfway. Cook on low for 6-8 hours or high for 3-4 hours until tender.
  5. Stir coconut milk into the slow cooker and heat through on low for an additional 15 minutes before serving.
  6. Prepare garlic naan as desired and serve alongside your curry.
