- 1 large onion, finely chopped
- 4 cloves garlic, minced
- 1 tablespoon fresh ginger, grated
- 2 teaspoons curry powder
- 1 teaspoon garam masala
- 1 teaspoon ground cumin
- 1 teaspoon paprika
- 1/4 teaspoon cayenne pepper (optional)
- 1 can (13.5 oz) coconut milk
Instructions
- Season beef cubes with salt and black pepper. Heat vegetable oil in a large skillet over medium heat and sear the beef until browned on all sides.
- In the same skillet, sauté chopped onion, minced garlic, and grated ginger until onions are translucent.
- Stir in curry powder, garam masala, ground cumin, paprika, and optional cayenne; cook for an additional minute.
- Transfer the beef mixture to a slow cooker and add broth or water to cover halfway. Cook on low for 6-8 hours or high for 3-4 hours until tender.
- Stir coconut milk into the slow cooker and heat through on low for an additional 15 minutes before serving.
