  • 1 white onion, diced
  • 1 poblano pepper or jalapeno pepper, diced
  • 2 cloves garlic, minced
  • 2 tsp chili powder
  • 2 tsp cumin
  • 1 tsp sea salt
  • 1 tbsp olive oil or avocado oil
  • 2 cups frozen corn
  • 2 medium russet potatoes, peeled and diced
  • 1 chipotle pepper in adobo sauce, diced
  • 2 tbsp adobo sauce
  • 1 lb chicken breast
  • 6 cups chicken broth
  • 8 oz cream cheese or crème fraîche
  • 6 slices of Turkey Bacon, optional
  • 2 limes, for garnish
  • cilantro, for garnish
  • 1/2 cup cotija cheese, optional

Instructions

  1. In a large sauté pan over medium heat, heat the olive oil. Add diced onion, pepper, and minced garlic; sauté for 3 minutes until softened.
  2. Stir in chili powder and cumin; cook for an additional 2 minutes until fragrant. Transfer to a slow cooker.
  3. Add frozen corn, diced potatoes, chipotle pepper, adobo sauce, chicken breast, and chicken broth to the slow cooker. Mix well.
  4. Cover and cook on low for 6 to 8 hours.
  5. About 30 minutes before serving, stir in cream cheese until melted and smooth.
  6. Serve hot in bowls topped with crispy turkey bacon crumbles and fresh cilantro.
