  • 4 Persian cucumbers or 1 English cucumber
  • 1 medium ripe avocado
  • 1/4 cup crumbled feta cheese
  • 1/4 cup chopped pistachios
  • 1/4 cup chopped fresh dill
  • 1/4 cup chopped fresh chives
  • 23 tablespoons extra virgin olive oil
  • 1 tablespoon lemon juice
  • 1 tablespoon Dijon mustard
  • 2 teaspoons honey
  • 2 cloves garlic – peeled and minced
  • Salt and pepper – to taste

Instructions

  1. Wash and dry cucumbers, then chop in half. Smash each half gently and chop into 1-inch pieces.
  2. In a medium bowl, combine smashed cucumbers with chopped avocado, feta cheese, pistachios, dill, and chives.
  3. In a jar or small bowl, whisk together olive oil, lemon juice, Dijon mustard, honey, minced garlic, salt, and pepper until emulsified.
  4. Pour the dressing over the salad ingredients and toss gently to combine. Serve immediately.
