Ingredients
- 150g boneless, skinless chicken breast
- 1 tsp olive oil
- 1 tsp paprika
- 1 tsp garlic powder
- 1 tsp cayenne pepper (adjust to spice preference)
- Salt & black pepper, to taste
- 1 cup uncooked white rice
- 1 cup water
- Pinch of salt
- 1 cup sliced cucumber
- 1 cup cherry tomatoes, halved
- 2 tbsp diced red onion
- 1 tsp chopped fresh parsley or dill
- Avocado, sliced
- 1 tbsp spicy mayo (mayonnaise mixed with sriracha)
Instructions
- Rinse the rice until the water runs clear. In a pot, combine the rinsed rice with water and a pinch of salt, bring to a boil, then cover and simmer for 12-15 minutes until fluffy.
- While the rice cooks, toss chicken cubes with olive oil, paprika, garlic powder, cayenne pepper, salt, and black pepper. Cook in a skillet over medium-high heat for 6-8 minutes until golden brown.
