  • 1 bunch parsley (chopped)
  • 1 onion (diced)
  • 4 tablespoons psyllium husks
  • 4 tablespoons nutritional yeast flakes
  • 2 bell peppers (chopped)
  • 1/2 cup chickpea flour
  • 2 teaspoons smoked paprika
  • 1 teaspoon spicy paprika
  • 1/2 teaspoon chili flakes
  • sea salt and ground pepper (to taste)
  • oil (for frying)

Instructions

  1. Cook the red lentils in a pot with water for about 15 minutes until soft. Strain and mash them in a bowl.
  2. Combine the mashed lentils with parsley, onion, psyllium husks, nutritional yeast, bell peppers, chickpea flour, spices, salt, and pepper until you achieve a sticky mixture.
  3. Heat oil in a non-stick pan over medium heat. Shape the mixture into patties and fry each side for about 2 minutes until golden brown.
  4. Serve warm with your choice of dips or sides.
