Ingredients
- 1 large cauliflower
 - 2 big sweet potatoes
 - 110 mL soy cream
 - 1 tbsp vegan butter
 - Olive oil
 - Garlic powder
 - Salt
 - Pepper
 - Fresh herbs (for garnish)
 - Chopped pistachios
 
Instructions
- Preheat oven to 210 °C (410 °F).
 - Slice cauliflower into thick steaks and arrange on a parchment-lined baking sheet. Drizzle with olive oil, season with garlic powder, salt, and pepper.
 - Roast in the oven for 30 minutes, flipping halfway through.
 - Boil peeled sweet potatoes until tender (15-20 minutes). Drain and mash in a bowl.
 - Mix in soy cream, vegan butter, salt, and pepper until smooth.
 - Serve mashed sweet potatoes topped with roasted cauliflower steaks, garnished with fresh herbs and pistachios.
