Ingredients

  • chopped dates
  • homogenized milk
  • baking soda
  • butter
  • dark brown sugar
  • eggs
  • pure vanilla extract
  • unbleached all-purpose flour
  • baking powder
  • kosher salt
  • sea salt flakes

Instructions

  1. Preheat your oven to 350°F (175°C) and lightly butter an 11 x 8-inch casserole dish.
  2. In a small bowl, mix chopped dates with baking soda. Heat the milk in a saucepan until scalded; pour over the dates and set aside for 15 minutes.
  3. In another bowl, combine flour, baking powder, and salt. In a food processor, blend eggs, dark brown sugar, butter, and vanilla until smooth. Gradually add dry ingredients and soaked dates with their liquid; blend until combined.
  4. Pour batter into the dish and bake for about 30 minutes until golden.
  5. For the caramel sauce, melt butter in a saucepan; add brown sugar and salt until dissolved. Stir in cream and simmer until thickened.
  6. Poke holes in the baked pudding and pour a third of the caramel sauce over it. Let it soak for 15 minutes before serving with more sauce and whipped cream.
