- 1 3/4 cups all-purpose flour
- 1 tsp baking powder
- 1/4 tsp salt
- 1/8 tsp baking soda
Instructions
- Preheat your oven to 350°F (175°C) and grease a loaf pan.
- In a small bowl, mash the banana until smooth.
- Puree chopped strawberries with the gelatin substitute in a food processor or blender until smooth; mix into the mashed banana.
- Cream together butter and sugar in a stand mixer until fluffy.
- Add eggs and sour cream to the mixture and beat until combined.
- In a separate bowl, whisk together flour, baking powder, salt, and baking soda.
- Mix strawberry-banana mixture into the batter on low speed until blended.
- Gradually incorporate dry ingredients until just combined; avoid overmixing.
- Pour batter into the prepared pan and bake for 55-65 minutes or until a toothpick comes out clean.
