  • 3 oz strawberry-flavored gelatin substitute (such as pectin mix)
  • 1/2 lb strawberries, chopped
  • 1 3/4 cups all-purpose flour
  • 1 tsp baking powder
  • 1/4 tsp salt
  • 1/8 tsp baking soda

Instructions

  1. Preheat your oven to 350°F (175°C) and grease a loaf pan.
  2. In a small bowl, mash the banana until smooth.
  3. Puree chopped strawberries with the gelatin substitute in a food processor or blender until smooth; mix into the mashed banana.
  4. Cream together butter and sugar in a stand mixer until fluffy.
  5. Add eggs and sour cream to the mixture and beat until combined.
  6. In a separate bowl, whisk together flour, baking powder, salt, and baking soda.
  7. Mix strawberry-banana mixture into the batter on low speed until blended.
  8. Gradually incorporate dry ingredients until just combined; avoid overmixing.
  9. Pour batter into the prepared pan and bake for 55-65 minutes or until a toothpick comes out clean.
