  • 3 tbsp milk
  • 1 tsp vanilla extract
  • ½ cup non-alcoholic sparkling grape juice
  • 5 egg whites
  • 10 oz granulated sugar
  • 15 oz cold butter
  • ½ cup strawberry puree (about 7 oz whole strawberries)
  • Red or pink food gel coloring
  • White and gold sprinkles
  • Fresh strawberries
  • Pomegranate seeds
  • Fresh flowers

Instructions

  1. Preheat your oven to 350°F (175°C). Grease two 9-inch round cake pans and line them with parchment paper.
  2. In a mixing bowl, whisk together flour, sugar, baking powder, baking soda, and salt.
  3. In another bowl, combine eggs, vegetable oil, sour cream, milk, vanilla extract, and sparkling grape juice until smooth.
  4. Pour the wet mixture into the dry ingredients and stir until just combined.
  5. Divide the batter between the prepared pans and bake for 25–30 minutes or until a toothpick comes out clean.
  6. Let cakes cool in pans for 10 minutes before transferring them to wire racks to cool completely.
  7. For the frosting, whisk egg whites with sugar until stiff peaks form. Gradually add cold butter and mix until smooth; then fold in strawberry puree.
  8. Assemble by placing one layer on a serving plate, spreading frosting between layers, and frosting the top and sides.
  9. Decorate as desired with sprinkles or fresh fruit.
