  • 5 large egg whites
  • 1/4 teaspoon cream of tartar
  • 120 g granulated sugar (divided into 100g and 20g)
  • 5 large egg yolks
  • 60 g milk
  • 50 g oil
  • 1 teaspoon vanilla extract
  • 100 g cake flour
  • 1 teaspoon baking powder
  • 400 g heavy cream (cold)
  • 40 g powdered sugar
  • 1 teaspoon vanilla extract
  • 6 large strawberries (diced, plus more whole or halved strawberries for decoration)

Instructions

  1. Preheat oven to 170°C (340°F) and lightly grease a 6" round cake pan.
  2. Whip egg whites with cream of tartar until soft peaks form, then gradually add 100g sugar until stiff peaks form.
  3. In a separate bowl, whisk together egg yolks, milk, oil, and vanilla extract.
  4. Sift together cake flour and baking powder; mix into wet ingredients until smooth.
  5. Gently fold in one-third of whipped egg whites into the batter. Repeat until fully combined without deflating.
  6. Pour batter into the prepared pan and bake for about 25 minutes or until a skewer comes out clean. Cool completely before removing from pan.
  7. For the whipped cream topping, beat cold heavy cream with powdered sugar and vanilla extract until stiff peaks form.
  8. Slice cooled cake into three layers; layer whipped cream and diced strawberries between each slice. Decorate with whole or halved strawberries on top.
