  • 22 ½ tablespoons fresh strawberry syrup
  • 1 tablespoon fresh lemon juice
  • 1 ⅓ cups powdered sugar
  • 1 teaspoon vanilla

Instructions

  1. Preheat oven to 350°F (175°C) and line a baking sheet with parchment paper.
  2. In a mixing bowl, cream together softened butter and powdered sugar until smooth. Add cornstarch, vanilla extract, and salt; mix until well combined. Gradually add flour until fully incorporated.
  3. Roll dough into small balls (1 inch in diameter) and coat each ball in cane sugar before placing on the prepared baking sheet.
  4. Bake for about 10-12 minutes until lightly golden on the bottom.
  5. For the icing, mash diced strawberries with granulated sugar in a bowl. Mix in strawberry syrup, lemon juice, powdered sugar, and vanilla until smooth.
  6. Once cookies are cool, drizzle or spread the icing over them and allow to set before serving.
