  • ¼ cup coconut oil (melted)
  • ¼ cup cane sugar
  • 1 large egg
  • ½ cup all-purpose flour
  • ½ cup oat flour
  • ¼ teaspoon cinnamon
  • ¼ teaspoon salt
  • 1 pound strawberries (small diced)
  • 2 tablespoons cane sugar (for filling)
  • 1 tablespoon lemon juice
  • 1 ½ cups rolled oats

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. In a mixing bowl, toss diced strawberries with two tablespoons of cane sugar and one tablespoon of lemon juice; set aside.
  3. In another bowl, whisk together melted coconut oil, cane sugar, and egg. In a separate bowl, mix all-purpose flour, oat flour, cinnamon, and salt. Gradually combine dry ingredients with wet ingredients until just mixed.
  4. Grease a baking dish and spread half of the oat mixture evenly on the bottom. Layer with the strawberry filling and crumble the remaining oat mixture on top.
  5. Bake for about 45 minutes or until golden brown.
  6. Allow cooling in the pan before cutting into squares.
