Ingredients
- ¼ cup coconut oil (melted)
- ¼ cup cane sugar
- 1 large egg
- ½ cup all-purpose flour
- ½ cup oat flour
- ¼ teaspoon cinnamon
- ¼ teaspoon salt
- 1 pound strawberries (small diced)
- 2 tablespoons cane sugar (for filling)
- 1 tablespoon lemon juice
- 1 ½ cups rolled oats
Instructions
- Preheat your oven to 350°F (175°C).
- In a mixing bowl, toss diced strawberries with two tablespoons of cane sugar and one tablespoon of lemon juice; set aside.
- In another bowl, whisk together melted coconut oil, cane sugar, and egg. In a separate bowl, mix all-purpose flour, oat flour, cinnamon, and salt. Gradually combine dry ingredients with wet ingredients until just mixed.
- Grease a baking dish and spread half of the oat mixture evenly on the bottom. Layer with the strawberry filling and crumble the remaining oat mixture on top.
- Bake for about 45 minutes or until golden brown.
