- 2 cups fresh or frozen strawberries, chopped
- 2 tablespoons granulated sugar (or honey)
- 1 tablespoon lemon juice
- 1 tablespoon cornstarch (to thicken)
- 1/2 teaspoon vanilla extract
- 1 1/2 cups old-fashioned rolled oats
- 1 cup all-purpose flour
- 1/2 cup light brown sugar (packed)
- 1/2 teaspoon baking powder
- 1/4 teaspoon salt
- 1/2 teaspoon ground cinnamon (optional, but recommended)
- 1/2 cup unsalted butter, cold and cut into small cubes
- 1/4 cup honey or maple syrup (optional, for added sweetness)
- 1/2 teaspoon vanilla extract
Instructions
- Prepare the strawberry filling by cooking chopped strawberries, sugar, lemon juice, cornstarch, and vanilla extract in a saucepan until thickened.
- Preheat your oven to 350°F (175°C) and prepare an 8×8-inch baking pan.
- In a mixing bowl, combine oats, flour, brown sugar, baking powder, salt, and cinnamon. Cut in the cold butter until crumbly.
- Press two-thirds of the mixture into the bottom of the pan. Spread cooled strawberry filling over it and top with remaining crumble mix.
- Bake for 35–40 minutes until golden brown and bubbling at the edges.
- Allow to cool before slicing.
