  • 2 cups fresh or frozen strawberries, chopped
  • 2 tablespoons granulated sugar (or honey)
  • 1 tablespoon lemon juice
  • 1 tablespoon cornstarch (to thicken)
  • 1/2 teaspoon vanilla extract
  • 1 1/2 cups old-fashioned rolled oats
  • 1 cup all-purpose flour
  • 1/2 cup light brown sugar (packed)
  • 1/2 teaspoon baking powder
  • 1/4 teaspoon salt
  • 1/2 teaspoon ground cinnamon (optional, but recommended)
  • 1/2 cup unsalted butter, cold and cut into small cubes
  • 1/4 cup honey or maple syrup (optional, for added sweetness)
  • 1/2 teaspoon vanilla extract

Instructions

  1. Prepare the strawberry filling by cooking chopped strawberries, sugar, lemon juice, cornstarch, and vanilla extract in a saucepan until thickened.
  2. Preheat your oven to 350°F (175°C) and prepare an 8×8-inch baking pan.
  3. In a mixing bowl, combine oats, flour, brown sugar, baking powder, salt, and cinnamon. Cut in the cold butter until crumbly.
  4. Press two-thirds of the mixture into the bottom of the pan. Spread cooled strawberry filling over it and top with remaining crumble mix.
  5. Bake for 35–40 minutes until golden brown and bubbling at the edges.
  6. Allow to cool before slicing.
