  • 4 cups chicken broth
  • 1 tablespoon chicken base (such as Better Than Bouillon)
  • 3 tablespoons lime juice
  • More cilantro (optional)
  • Crumbled cotija cheese (optional)
  • Chili powder (optional)
  • Lime wedges (optional)

Instructions

  1. In a large soup pot over medium heat, sauté onion, jalapenos, corn kernels, and seasonings in olive oil until soft.
