  • 3 tbsp milk (for cookie dough balls)
  • 1/2 cup special occasion sprinkles (jimmies)
  • 24 oz cream cheese (room temperature)
  • 3/4 cup white granulated sugar (for cheesecake filling)
  • 1/2 cup sour cream or Greek yogurt
  • 1/4 cup heavy cream (room temperature)
  • 1 tsp pure vanilla extract (for cheesecake filling)
  • 4 large eggs (room temperature)
  • 3/4 cup cookie dough balls (for cheesecake filling)
  • 1 cup white chocolate chips (for ganache)
  • 1/3 cup heavy cream (for ganache)

Instructions

  1. Preheat the oven to 350°F (175°C). Prepare the crust by mixing flour, baking soda, and salt. Cream together butter and sugar until fluffy, then add eggs and vanilla. Gradually mix in dry ingredients and fold in sprinkles. Press into a greased springform pan.
  2. For cookie dough balls, combine flour and salt; cream butter and sugar; mix in milk and vanilla; combine wet and dry ingredients; fold in sprinkles; form small balls.
  3. Beat cream cheese until smooth; add sugar, sour cream, heavy cream, vanilla; mix in eggs one at a time. Fold in cookie dough balls.
  4. Pour cheesecake mixture over crust; bake for about 80 minutes or until slightly jiggly in the center. Cool inside the oven for an hour.
  5. For ganache, heat heavy cream until simmering; stir in chocolate chips until melted.
  6. Cool cheesecake completely before refrigerating for at least four hours or overnight. Top with ganache before serving.
