Ingredients
- 12 oz bowtie pasta
- 2 Roma tomatoes
- 1 yellow squash
- 1 zucchini
- 1 broccoli crown
- 1/2 red onion
- 1 jar roasted red peppers
- Fresh parsley
- 1/2 cup olive oil
- 1/3 cup red apple vinegar
- 1 Tbsp Dijon mustard
- 1 tsp dried oregano
- 1 clove garlic, minced
- 3/4 tsp salt
- 1/4 tsp freshly cracked black pepper
Instructions
- Prepare the vinaigrette by whisking together olive oil, red apple vinegar, Dijon mustard, dried oregano, minced garlic, salt, and black pepper in a large mixing bowl.
- Cook the bowtie pasta according to package directions (7–10 minutes). Drain and rinse under cold water.
- While the pasta cooks, chop the vegetables into bite-sized pieces.
- In the mixing bowl with the vinaigrette, combine the cooled pasta and chopped vegetables. Toss until well coated.
- Serve immediately or refrigerate for later.
