  • 12 oz bowtie pasta
  • 2 Roma tomatoes
  • 1 yellow squash
  • 1 zucchini
  • 1 broccoli crown
  • 1/2 red onion
  • 1 jar roasted red peppers
  • Fresh parsley
  • 1/2 cup olive oil
  • 1/3 cup red apple vinegar
  • 1 Tbsp Dijon mustard
  • 1 tsp dried oregano
  • 1 clove garlic, minced
  • 3/4 tsp salt
  • 1/4 tsp freshly cracked black pepper

Instructions

  1. Prepare the vinaigrette by whisking together olive oil, red apple vinegar, Dijon mustard, dried oregano, minced garlic, salt, and black pepper in a large mixing bowl.
  2. Cook the bowtie pasta according to package directions (7–10 minutes). Drain and rinse under cold water.
  3. While the pasta cooks, chop the vegetables into bite-sized pieces.
  4. In the mixing bowl with the vinaigrette, combine the cooled pasta and chopped vegetables. Toss until well coated.
  5. Serve immediately or refrigerate for later.
