 - 1 ripe avocado, sliced
 - 1 ripe avocado, halved
 - 1 cup cherry tomatoes, halved
 - 1 cup cooked or canned corn, drained
 - 1 cup fresh parsley or arugula
 - 1 tsp sesame seeds
 - 1 tsp olive oil
 - Salt and pepper to taste
 
Instructions
- In a nonstick pan, heat a small amount of oil over medium heat. Crack the egg into the pan and cook sunny-side-up until the white is set and the yolk remains runny.
 - In a mixing bowl, arrange the halved avocado, sliced avocado, cherry tomatoes, corn, and fresh parsley or arugula.
