Ingredients

  • 500g chicken breast, cut into bite-sized pieces
  • 2 tbsp soy sauce
  • 1 tbsp cornstarch
  • 1 tbsp sesame oil
  • 1 red bell pepper, sliced
  • 1 green bell pepper, sliced
  • 2 green onions, chopped
  • 2 garlic cloves, minced
  • 1 tsp fresh ginger, grated
  • 3 tbsp soy sauce (for the sauce)
  • 2 tbsp hoisin sauce
  • 1 tbsp rice vinegar
  • 1 tbsp honey
  • 1/2 tsp chili flakes (optional)
  • 3 cups cooked white rice

Instructions

  1. In a mixing bowl, toss chicken pieces with soy sauce, cornstarch, and sesame oil until evenly coated.
  2. Heat a wok or large pan over medium-high heat. Add the marinated chicken and cook for about 5-7 minutes until fully cooked and browned. Remove from the pan.
  3. In the same pan, stir-fry minced garlic, grated ginger, and sliced bell peppers for about 3-4 minutes until they’re tender yet crisp.
  4. Return the chicken to the pan and add soy sauce, hoisin sauce, rice vinegar, honey, and chili flakes (if using). Stir until everything is well combined and glossy.
  5. Serve hot over warm cooked rice and garnish with chopped green onions.
