Instructions
- Preheat your oven to 350°F (175°C).
- In a mixing bowl, whisk together the milk, eggs, maple syrup, applesauce, and vanilla essence until well combined.
- In another bowl, mix the oats, baking powder, cinnamon, nutmeg, and salt.
- Gradually add the dry mixture to the wet ingredients and stir until just combined. Fold in the chopped apples.
- Grease a muffin tin lightly and pour the mixture into each muffin cup about three-quarters full.
- Bake for approximately 28 minutes or until golden brown and set. Allow cooling slightly before removing from the tin.
