  • 2 cups cauliflower pieces
  • 1 cup carrot rounds (1/2-inch thick)
  • 1 bell pepper, sliced
  • 1/2 red onion, roughly chopped
  • 2 tbsp olive oil
  • 3 garlic cloves, finely chopped
  • 1/2 cup sun-dried tomatoes in oil, chopped
  • 1 cup coconut cream
  • 1/2 cup vegetable broth
  • 1/3 cup rennet-free parmesan cheese (optional)
  • 1/2 tsp salt
  • 1/2 tsp ground black pepper
  • 1/2 tsp crushed red pepper flakes
  • 1 tsp Italian herb blend
  • 1/4 tsp ground black pepper
  • 1 tsp balsamic vinegar
  • 1/3 cup chopped fresh basil

Instructions

  1. Preheat the oven to 425°F (220°C).
  2. In a mixing bowl, combine cauliflower, carrots, bell pepper, and red onion. Drizzle with olive oil and season with salt and pepper; toss well.
  3. Spread the seasoned vegetables on a baking sheet and roast for about 25 minutes until golden brown.
  4. While roasting, prepare the sauce by sautéing garlic and red pepper flakes in olive oil until fragrant. Add sun-dried tomatoes, coconut cream, and vegetable broth; cook for about 5 minutes until slightly thickened.
  5. Once the vegetables are done, pour the sauce over them on the baking sheet. Sprinkle with parmesan (if using) and return to the oven for an additional 5 minutes.
  6. Drizzle with balsamic vinegar before serving warm.
