- 1/2 bell pepper (thinly sliced)
- 1 pound ground chicken (lean, or diced chicken breast or ground turkey)
- 2 teaspoons light brown sugar
- 1 Tablespoon hoisin sauce
- 1/4 cup low-sodium soy sauce
- 2 Tablespoons Asian Garlic Chili Sauce or Sambal Oelek (more or less to taste)
- 1 cup low-sodium chicken broth
- 1/4 cup water
- 1 teaspoon cornstarch
- 2/3 cup fresh basil leaves
- Cooked Jasmine rice
Instructions
- Heat olive oil in a wok or large skillet over medium-high heat.
- Sauté shallots for 2 minutes until translucent, then add garlic and ginger, stirring for 1 minute.
- Add sliced bell pepper; cook for another 2-3 minutes until tender-crisp.
- Incorporate ground chicken (or turkey) and cook until no longer pink, about 5-7 minutes.
- Stir in light brown sugar, hoisin sauce, soy sauce, and chili sauce until well combined.
- Pour in chicken broth; mix cornstarch with water to create a slurry and add to the pan, stirring until the sauce thickens (2-3 minutes).
- Add fresh basil leaves; cook until wilted.
