  • 1 egg yolk

  • 1/4 cup buttermilk
  • 1 tablespoon sugar (for topping)
  • 1/2 teaspoon baking powder
  • 1/2 teaspoon kosher salt (for topping)

Instructions

  1. Preheat your oven to 375°F (190°C).
  2. Drain canned peaches and place them in a 9×13 baking dish. Sprinkle with the flour, cinnamon, nutmeg, and salt. Stir gently to combine.
  3. In a large bowl, mix together the dry ingredients for the topping: flour, sugar, baking powder, cinnamon, nutmeg, and salt.
  4. In another bowl, whisk together the egg yolk and buttermilk. Add this to the dry mixture and stir until just combined.
  5. Pour the topping over the peaches evenly and scatter cold butter pieces on top. Sprinkle with additional sugar.
  6. Bake for about 30-40 minutes until golden brown and bubbly around the edges.
