  • 1/2 teaspoon Salt

  • 1/2 teaspoon Nutmeg
  • 2 teaspoons Corn starch
  • 1 teaspoon Cream of tartar
  • 1/2 stick Butter (unsalted, room temperature)
  • 2 tablespoons Water
  • 1 teaspoon Fresh lemon juice
  • 1/4 cup Boiling hot water
  • 3 tablespoons Granulated sugar (to dust top of cobbler)

Instructions

  1. Preheat your oven to 375°F.
  2. In a sprayed 9×13 baking dish, combine frozen peaches, both sugars, vanilla, almond extract, cinnamon, nutmeg, cornstarch, cream of tartar, room-temperature butter, water, and lemon juice. Mix well and cover with foil; bake for 20 minutes.
  3. In a mixing bowl, whisk together flour, both sugars, baking powder, salt, and half tablespoon cinnamon.
  4. Incorporate cold butter into the flour mixture using a pastry cutter until crumbly.
  5. Add hot water to the dry mixture; stir gently until just combined.
  6. Spoon cobbler dough over baked peaches in golf ball-sized portions.
  7. Sprinkle remaining sugar and cinnamon on top; return to the oven uncovered and bake for another 30–45 minutes until golden brown.
