- 190g graham crackers
- 35g sugar
- 75g melted unsalted butter
- 32 oz full-fat cream cheese
- 325g granulated sugar
- ½ tsp salt
- 1 tsp vanilla essence
- 4 large eggs
- 120g heavy cream
- 240g sour cream
- 1 tbsp cornstarch
- Juice of 2 lemons (1 tbsp for filling and juice of half for compote)
- 1 lb strawberries
- 55g sugar
- 1 tsp cornstarch

- Preheat your oven to 350°F (175°C).
- Combine graham crackers, sugar, and melted butter in a bowl; press into the bottom of a springform pan to form the crust. Bake for about 10 minutes until golden, then let cool.
- Beat cream cheese until smooth in a mixing bowl. Gradually add granulated sugar and salt, mixing well. Add vanilla essence and mix again.
- Incorporate eggs one at a time, followed by heavy cream, sour cream, cornstarch, and lemon juice until fully combined.
