  • 1/3 cup apricot preserves
  • 1/4 cup granulated sugar
  • 1 teaspoon lemon zest
  • 2 tablespoons lemon juice
  • 1 pineapple (chopped)
  • 2 cups purple grapes (halved)
  • 2 cups green grapes (halved)
  • 1 pound strawberries (hulled and quartered)
  • 5 kiwi (peeled and quartered)
  • 2 large mangos (chopped)
  • 10 ounces blueberries
  • 6 ounces raspberries (optional)
  • 2 cans mandarin oranges (drained)

Instructions

  1. In a large mixing bowl, combine apricot preserves, sugar, lemon zest, and lemon juice. Mix well.
  2. Chop the pineapple, halve the grapes, hull and quarter the strawberries, peel and quarter the kiwi, then add all to the bowl.
  3. Slice mangos close to the pit, score without cutting through the peel, scoop into bits, and add to the mix along with blueberries and optional raspberries.
  4. Drain mandarin oranges thoroughly before adding them to your salad mix; gently stir everything together.
  5. Serve immediately, garnished with fresh mint if desired.
