  • 500g cooking apples (e.g., Bramleys)
  • 500g eating apples (e.g., Galas or Braeburns)
  • 75g golden syrup
  • 75g soft light brown sugar
  • 150g cold diced butter
  • 225g plain flour
  • 75g rolled oats
  • 75g demerara sugar
  • Optional: ground cinnamon

Instructions

  1. To make the toffee sauce, combine all toffee sauce ingredients in a saucepan. Simmer on low heat until smooth and set aside to cool.
  2. In a mixing bowl, combine flour, oats, and salt. Rub in cold butter until the mixture resembles breadcrumbs, then stir in demerara sugar.
  3. Preheat your oven to 180C (350F). In a saucepan over low heat, cook the sliced apples with golden caster sugar and optional cinnamon for about 5 minutes until softened.
  4. Pour the softened apples into a baking dish. Drizzle with cooled toffee sauce and top with crumble mixture.
  5. Bake for 30–40 minutes until golden brown and bubbling. Serve warm.
